Cooking + Galveston Fun
Sunday, October 28, 2012Maybe because it was Friday...? or because I was getting ready to drive out to Galveston the next day, but I cooked up a storm yesterday! Scrounged up all the frozen shrimp I could find and sauteed them in Worcestershire sauce, lemon juice, creole seasoning, and green onions. I sliced up some turkey bacon and added that to the mix as well. It's definitely one of those simple recipes to keep on hand in the future. On the other side of the stove, I was boiling pasta for a classic Italian pasta. It was just one of those 'Simply Pasta' salad boxes where you just add mayonnaise to the seasoning. And at the same time, I was also throwing together a quick mix for some cheddar biscuits.
I didn't have any Bisquick on hand so I used the Trader Joe's pancake mix. I was concerned about the shortening ingredient, but I noticed that the box said you could use it for biscuits. So... just subbed that in for Bisquick. I added Parmesan, creole seasoning, sour cream, milk, and shredded cheddar cheese! I made six big biscuits with that batch. They won't be the last batch I make either!
Ben was online with me at the time and he was surprised when I didn't stop at three things to make. The fourth food I worked on was strawberry napoleons. For some reason, my parents purchased a bunch of strawberries and since they don't last very long, I had to figure out a way to use them. It was my first time trying to make this; just combined vanilla pudding and whipped cream for the filling and topped them with sliced strawberries. Even the dough was store-bought. Just needed to pop the dough in the oven and assemble all of this together. Ben pretty much gobbled up a huge chunk when I brought him some of the pastries...makes me a happy girlfriend haha
Anyway, we spent all day studying at his school. I'm still awestruck every time I walk over to his campus. Residual feelings of regret/broken dreams? Perhaps, but I think it's mostly wanting to be back in grad school. My time will come!
We ate lunch at his place (he slow-cooked pork last night; admitted to waking up at 6am to turn it over), where he prepared the lunch for me this time! It was absolutely delicious and, well, there's just something about watching guys cook for you that makes you feel all warm and fuzzy inside. We also stopped at one of my favorite bakeries for chocolate rugelachs. They sadly ran out (usually do) but we walked away three petit fours and a cinnamon raisin rugelach for Ben. I always purchase white cake petit fours but I was eyeing the almond cake petit fours. I should've got those instead! Gives us an excuse to come back next time I think. Even though it was mostly uneventful, we did go out for dinner at Courtyard Caffe. Literally off the beaten path and into Europe.
Never expected to find this place. I wonder if anyone can find this place. There's no sign advertising them, no lights, just a a cut of a rather large chef on the sidewalk.
There wasn't any menu as far as I can tell; all the servers had three or four dishes memorized. Their signature dish, Wiener Schnitzel, was not mentioned so we didn't order it. Only to find that they did have it and our server had forgotten to mention it! Ever since we had the Schnitzel Heaven & Hell at the German pub near Bryan, we've been on the search for a similar entree closer to home. Unsurprisingly, a vow was made to come back for their schnitzel. I took pictures of the food we ate; gotta keep my foodspotting account somewhat active after all.
Weekends are so quick when you spend it with significant others! It's back to the daily grind but next weekend will be our belated-Halloween celebrations. Something to look forward to! Next post will definitely cover the newest footwear I've been coveting!!!
