Mmm bok choy!

I was going to write about my trip to Dallas but I haven't finished up the video that I wanted to include with it. In the meantime, I wanted to write about the dinner I just prepared after I was inspired by a similar dish that Ben's dad prepared when I was visiting their family.

I purchased two lbs. of ground pork and mixed in some garlic, fish sauce, soy sauce, and sesame oil. I formed large meatballs with my hands and placed them on a plate. I made enough that I had to put wax paper on top of the first meatballs so I could pile on more meatballs without them sticking together. I stuck those yummy delights in the fridge while I soaked vermicelli in hot water.

I actually ran out of the Swanson chicken broth so I had to make do with about 3 quarts of water and a dozen chicken bouillon cubes. It still tasted great! While that was getting boiled up on the stove, I took bok choy, rinsed it really well, and pulled the leaves. I halved some of the really long ones so they would be a little easier to eat.

Once the broth was boiling, I added the pork meatballs, the vermicelli, and the bok choy. Halfway through the simmering goodness, I added a dash of fish sauce and lime juice. Delicious! Ate two bowls (should've been one! Hate bloating haha) and more than enough to have leftovers for later. I'm super pleased with how this dinner turned out, especially since I remember to take a picture before it was all gobbled up. Now back to editing that video!
